Cool Cucumber Pasta

8 oz. uncooked penne pasta
1 Tbsp. vegetable oil
2 medium cucumbers, thinly sliced
1 medium onion, thinly sliced
1 1/2 c. sugar
1 c. water
3/4 c. white vinegar
1 Tbsp. prepared mustard
1 Tbsp. dried parsley flakes
1 tsp. salt
1 tsp. pepper
1/2 tsp. garlic salt

Cook pasta according to package directions; drain and rinse in cold water. Place pasta in a large bowl; stir in the oil, cucumbers and onion.
In a jar with a tight fitting lid, combine the remaining ingredients; shake well. Pour over salad; toss to coat. Cover and chill for 4 hours, stirring occasionally. Serve with a slotted spoon. Refrigerate leftovers.
Serves 8-10.

We loved this salad. The kids ate the noodles and wouldn't stop until it was gone - I couldn't get them to try the cucumbers, but that was okay cuz Jeff, Camrie & I ate what they wouldn't :) We really liked it and would love it again. Perfect amount.

So Beck, where did this recipe come from? I remember it from the "olden days". And coincidently, my friend Bonnie made it for me a couple of weeks ago, she got the recipe from the paper.

Anyways, loved it and I ate all the leftovers, without a slotted spoon! Definitely a repeat and perfect amount! (I bet it would go great with stuffed peppers)

Becky, I loved this salad!!! It was so good. This would have been great by itself, with a roll or something. Me, Trevor and Rylee were all literally fighting over the end of it! Thanks it was a great dinner and the perfect amounts!

hi, beckey. it's not snooping, that's why I have a link to it! I'm glad you dropped by! it is a wonderful group and is working out just right. I think there are issues with kids not liking things, but it's actually a novelty that someone else made dinner, so i think kids are actually more likely to try it! my fellow groupies would probably agree...
